Grate Grilled Neikid Corn

Corn is the quintessential summer side dish, especially when it's in season - there is nothing better! Linda O. (aka “Mama Shed”) shared this nice twist on grilled corn. It is quick and easy and the taste is out of this world. An interesting twist to this recipe is to add some cold smoke to the corn before you coat it with mayo and season it.

  • Prep: 10 mins
  • Cook: 15 mins
  • Yields: 4 ears of yumminess

Ingredients

4 ears Fresh Local Corn, husked

Mayonnaise (we LOVE Dukes)

AlubuKirky Seasoning Green Chile Rub

Directions

This recipe is all about the "Slather, Season and Roll!!"

1Shuck corn completely.

2Slather the corn in mayo.

3Sprinkle with AlbuKirky Seasoning Green Chile Rub.

Grilling Instructions:

1Set grill to Medium (400°F).

2Place corn onto the grates. We recommend sitting them parallel with the valleys to keep them from rolling.

3Roll 3-4 times over the course of 15 minutes.

4The mayo melts into the corn for extra juiciness and the kernels will pop in your mouth! Enjoy!

  1. Corn on the cob will be juicer if you soak it in a pot of water for 30 minutes or so before grilling. Keeps it from drying out.
